This is a single varietal of coffee known as Pacamara. It's a legendary kind of coffee because of how giant the beans are, but it tastes as impressive as it looks. 

We are roasting this special lot of coffee a few degrees lighter than our traditional Colombia beans, and it doesn't really taste the way you would expect a Colombian coffee to taste.  It has a lot going on -- floral, citrus, vanilla, and berry notes are present with a gentle acidity and clean finish.  

The complexity and floral flavors are really exciting to find in a Colombian bean, and it's a testament to farmers paying so much attention to their harvest. They pick the coffee at peak ripeness, ferment the coffee for exactly 64 hours, sort it carefully, measure it for the right sugar and moisture content, and ship out a very small amount of wonderful beans.
